La Petite Maison's Drink – How to Make It

WThis is a home-style take on a drink featured on a new drinks list. It's a party-sized pre-mixed that is packed full of flavours of a Christmas time, which makes it excellent for hosting a holiday party. Save the extra citrus syrup to use in breakfast cocktails, puddings, or for additional servings of the drink.

Bikini Recipe

Yields 10 guests

To make the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Cordial: Place the listed items into a pot, bring to a simmer, mixing until the sugar dissolves. Then, take off the heat allowing it to cool down fully. Transfer into an sterilised bottle, seal and refrigerate it chilled, it will last for about four weeks.

To make Batch Mix: Combine the specified liquid ingredients into a large bottle, leave to sit for one hour, then filter it best through a fine cloth, so it's fully clarified.

For serving: Measure 85ml of the cocktail base into your stirring glass filled with ice, and stir gently for one minute to cool it down. Filter into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a brief mist with the mandarin essence above the glass.
